Who loves quiche??? ME!!!! Well I have been making these for years now. I used to make them for a snack at work when living in London and the other girls in the office just loved them. They are a nice quick snack to keep in the fridge for when you are on the run and know you won’t have time to prepare breakfast (so you do not have to stop and buy that high calorie breakfast pita or steers or whatever other junk food you normally fancy).
I made them last weekend for my boyfriend. We had to head out the house early for his nieces birthday, so the night before I whipped these up so there would be no reason to buy junk food breakfast on the way. A mouthful of yumminess were his words!!!!
There are so many variations that you can try:
- Canned tuna and sweetcorn
- Smoked salmon with asparagus tips
- Roasted vegetables
- Ham/bacon and mushroom
- Mushrooms and peppadews
- Spinach and mushrooms
The list of variations is really endless and it really depends on personal taste.
Ingredients – makes between 8-12
100g fat free greek yogurt or 100g fat free plain cottage cheese
Filling of your choice
Salt and Pepper
Herbs of your choice
I sometimes even throw in some chillies for a bit of a bite.
Pre-cook which every filling you choose, but just for a little as you are still going to bake them in the oven.
Beat the eggs and mix with the yogurt/cottage cheese and whatever filling you fancy. Pour into you silicone cupcake molds (I love using these as they are non stick), cook for +/- 20 min on 180 degrees. I normally only take them out once you can see that the egg has set.
And if you really feel like being “naughty” you can add a sprinkle of cheese on them before you bake.
It really is that simple!!!
